The device and server exchange "sync anchors" on each sync. If the client sends an unexpected anchor on a request, the server no longer knows that the device has or not. This causes the server to tell the client to start over (slow sync) by deleting all the data and getting a new copy of all data from the server.
If the device was just pointed from one server to another, the sync anchors are going to be mismatched and cause a slow sync each time. While it will work, it is very data heavy and you cannot do much while it is syncing as you don't have the data until it finishes. Thus, it is highly undesirable/not recommended.
Fail over has been the #1 requirement for quite a while. It is being worked, but I can't say if/when it will be available.
